What was once 25 parking spots on asphalt is now a vibrant, grassy plaza encircled by diverse and unique tenants. The Exchange, a new development encompassing the 200 block of North College Avenue in Fort Collins, Colo., offers artisan food, craft cocktails, a free book library, self-service bike repair station, fire pits and public artwork embedded throughout the outdoor areas. The development by Brinkman and Richmark has three new businesses opening – The Infinite Monkey Theorem Urban Winery, Crooked Stave brewery and landscape architecture firm Norris Design.
Norris Design joined existing tenants, CopperMuse Distillery, FoCo Da Vinci Body and Club Pilates this week in the 20,000-square foot building on the north end of the development. An indoor putt-putt experience plans to open in the same building this May. Crooked Stave opened this weekend in the 9,000-square foot south building joining current tenant, build-your-own-pizza and craft beer restaurant, The Pizza Press. The Infinite Monkey Theorem will open this week in the upcycled shipping container above Vatos Tacos & Tequila restaurant. Other shipping container tenants at The Exchange include FoCo DoCo, bloom, and Chick’nCone. Old Town Churn opened in October as the anchor tenant of the outdoor plaza with a 30-foot-tall old-style churn bucket as their storefront.
Established in 1985, Norris Design is a planning, landscape architecture and branding firm with offices in Austin, Dallas, Denver, Flagstaff, Frisco, Phoenix and Tucson.
“Wine in a can” is part of The Infinite Monkey Theorem’s unique concept that brings wine-making into urban settings. Fort Collins will be their third location in addition to wineries in the RiNo district in Denver and the SoCo district in Austin. They will be hosting a grand opening event at their new space this Saturday, February 16th, from 12:00-10:00 P.M.
Crooked Stave brewery was founded in 2010 by owner, brewmaster and scientist Chad Yakobson after he wrote his Master’s thesis on Brettanomyces yeast species and their use in the brewing industry. Fort Collins is their second location in Colorado.
