Jax Fish House & Oyster Bar Collaborates with Poudre Valley Community Farms to Support Local Agriculture

(Fort Collins, CO— Nov. 9, 2016) As part of its efforts to encourage sustainability and local business practices, Jax Fish House & Oyster Bar hosted the 2nd Annual Harvest Moon Salmon Bake on Sept. 25. The dinner was held at Native Hill Farm and raised more than $1,200 to benefit Poudre Valley Community Farms, a local land cooperative dedicated to the success of community farming practices.

“The most important thing for local agricultural practices is to keep farms in the families that have cultivated them for several generations,” said Jax General Manager Rick Compton. “Jax is proud to be a part of this initiative and combine sustainable seafood with sustainable farming.”

The Salmon Bake event gathered approximately 170 attendees and featured a freshly prepared five course dinner, including several whole salmons cooked over an open fire for a rustic yet sophisticated atmosphere. Jax Chef Ricky Myers additionally served oysters on the half shell, tomato and yuzu gazpacho, smoked trout and more. Beer pairings by Odell Brewing Company and live music from local band Smooth Beethoven complemented the delicious cuisine.

“Our guests thoroughly enjoyed the food and ambiance at the Harvest Moon Salmon Bake,” said Gailmarie Kimmel of Poudre Valley Community Farms. “The event was especially momentous because it was held on the farmland that we are working to preserve, and we look forward to many more community events in the future.”

Poudre Valley Community Farms strives to keep farmland in the hands of local farmers and ranchers by purchasing land and leasing it to community members. By preventing agricultural land from being used for commercial purposes, the organization can provide opportunities for local food production and economic growth.
