Within the newest community gathering place in Old Town Fort Collins, Brinkman has announced several new tenants that will add to the experiential restaurant and retail center. The Exchange, a redevelopment of the 200 block of North College Avenue, will now include a DIY wood sign workshop, a carry out and delivery chicken wing concept and the first brick-and-mortar location for one of the most popular food trucks in Fort Collins.
Board & Brush
Board & Brush Creative Studio which opened last weekend at The Exchange, offers DIY wood sign workshops. Visitors can choose a wood project from a gallery of more than 300 designs and all materials and instructions are provided to complete it. The company also has successful workshops in Highlands Ranch, Colorado Springs, Parker, Boulder and Denver.
Wingstop
Touted as “the wing experts,” Wingstop offers carry out or delivery wings, fries and sides. Wings can be purchased in combo meals, group packs or by-the-piece. This popular chicken wing chain has more than 15 other locations along the Front Range. The Fort Collins location will open this Fall at The Exchange.
La Piadina
Since 2013, La Piadina has been serving “Italian street food” to the masses through a food truck operating in Fort Collins. Their made-from-scratch dough and sauces, as well as fresh produce from local famers have garnered a strong following for the mobile business. La Piadina will open their first restaurant at The Exchange this Fall serving Italian flatbread sandwiches.
AllState Insurance
AllState Insurance Agent Mark Newendyke opened an office in the north building of The Exchange. He serves clients along the Front Range by providing auto, home, renters, business, and life insurance. He is one of 16 licensed agents in Colorado.

Just down the street from The Exchange, DAE GEE and Uno Mas Taqueria y Cantina both recently opened in the mixed-use building at 120 West Olive, owned and managed by Brinkman. With unique food and drink concepts and expansive outdoor patios, the two new restaurants have already seen success in the prime downtown location.
DAE GEE (which means pig in Korean) offers a unique twist on Korean barbecue. The fast-casual restaurant offers a variety of barbecue options and sides, shaved ice and catering options. The restaurant has daily promotions including $15 all you can eat wings and dumplings, 10% off catering and BOGO happy hour specials. The Fort Collins restaurant is the fifth location in Colorado.
Next door to DAE GEE, Uno Mas Taqueria y Cantina has opened their third location in Colorado. Known for their commitment to fresh vegetables, herbs and meats, Uno Mas has their own farmland and a large indoor greenhouse providing the freshest produce harvested daily. The restaurant provides catering and can be reserved for birthdays, holiday parties, business meetings, engagements and small wedding rehearsals for groups up to 65.
