March is Oyster Month at Jax Fish House & Oyster Bar
(Denver, Boulder, Fort Collins, CO – February 23, 2017) Throughout the month of March, Jax will be celebrating the mighty mollusk with weekly chef specials, contests, giveaways, and the fifth annual High West Oyster Fest at Boulder Theater. A portion of sales at each location—Boulder, LoDo, Fort Collins, and Glendale—will be donated to their local charitable partners: Boulder – YWCA of Boulder County; LoDo and Glendale – Family Tree; Fort Collins – Food Bank for Larimer County; Kansas City – Leukemia & Lymphoma Society.
The weekly oyster features will be different at each restaurant, created by the chef de cuisine and inspired by oyster-loving cultures from across the globe. Jax will also feature an expanded mignonette and oyster menu throughout the month. Among these is the Emersum oyster, cultivated exclusively for Jax Fish House by Virginia’s Rappahannock River Oyster Company. The oyster is described by Jax Executive Chef Sheila Lucero as a perfectly balanced oyster with consistently sweet, salty, and creamy qualities that is sustainably grown and harvested at a specific point in the Chesapeake Bay, giving the Emersum its own “merroir.” For every Emersum oyster sold throughout the month, 10¢ will be donated to the local charitable partners.
On March 1, Jax will tap kegs of Emersum Oyster Stout, brewed by Odell Brewing in Fort Collins, Colorado. Members of staff from all Colorado Jax restaurants joined forces with the brewers to help make this oyster stout. They added shucked Emersum oysters to the mash and then whole oysters—shell and all—to the boil. According to Jax Executive Manager Adam Reed, this process adds more minerality, more mouthfeel, and a subtle brightness to the beer, and makes for an excellent companion to a dozen oysters on the half shell.

A Dozen Dozens
Guests are entered to win free oysters for a year every time they order a dozen oysters throughout the month of March.
Oyster Specials from Different Regions
Each week the chef de cuisine of each Jax location will showcase an oyster speciality from a different region: week 1 – Chesapeake Bay; week 2 – Rhode Island/Delaware; week 3 – New Brunswick/Maine; week 4 – British Columbia; week 5 – California/Washington State. While the regional focus will be the same for all Jax restaurants, each chef will serve a special of their own design and style.
$5 Ol’ Zippy from The Post Brewing Company, specials with Tito’s vodka, Milagro tequila, and Oyster Bay Wines all month long.
National Oyster on the Half Shell Day
On Friday, March 31 Jax is celebrating National Oyster on the Half Shell Day by giving all guests a bonus card good for a free 1/2 dozen oysters in the future.
High West Oyster Fest
Oyster Month culminates with the 5th Annual High West Oyster Fest on Tuesday, April 4 at Boulder Theater from 6:00 – 9:00 p.m. The celebration will include the 17th annual Oyster Eating Competition, the 5th annual Oyster Shucking Competition, and live music. Guests will enjoy Jax food and drink favorites such as Oysters on the Half Shell, Peel n’ Eat Shrimp, Chicken & Crawfish Gumbo, Chicken & Sausage Jambalaya, Spicy Tuna, Smoked Trout & Quinoa Salad. All proceeds and donations from the evening will directly benefit YWCA of Boulder County. High West Oyster Fest 2017 is sponsored by Jax longtime partners Northeast Seafood, Rappahannock River Oyster Company, and the Daily Camera.
Tickets are $35 for adults, $15 for children (12 & under), and $20 for CU Students (must have valid I.D.).
VIP tickets are $75 per person and include: entry in the Dozen Dozens free oysters for a year contest; 5 free raffle tickets; exclusive access to VIP area on the mezzanine; complimentary welcome champagne; a hosted menu from 5:00 – 7:00 p.m.; private raw bar; and a Meet-and-Greet-and-Shuck-and-Slurp with Jax’ friends from the Rappahannock River Oyster Company.
